A slight variant on a famous [[Chinese]] [[Noodles]] dish
# Ingredients for 2 servings
- For serving:
- 1 Large [[Tomato]], peeled and diced
- 2 servings of [[Noodles]]
- 3 [[Egg]]s
- For the oil spill:
- 3 tblsp High smoke point neutral [[Oil]], like [[Peanut Oil]]
- 2 tblsp minced [[Onion]]
- 10g minced [[Garlic]] (about 4 cloves)
- 1 tsp [[Chili Flakes]]
- Seasoning:
- 1 tblsp. [[Light Soy Sauce]]
- 2 teasp. [[Oyster Sauce]]
- 1/2 tsp. [[Sugar]]
- pinch of [[Salt]] (or [[Chicken Stock Powder]]), to taste
# Steps
1. Close to serving time, ensure:
- [[Tomato]] is peeled and diced
- [[Egg]]s are fried
- [[Noodles]] are cooked through.
2. Split the minced [[Onion]], minced [[Garlic]], and [[Chili Flakes]] between the two bowls
3. Heat up the [[Oil]] until it's shimmering and lightly smoking (For [[Peanut Oil]] this is around 220-230C), then pour over spices in bowls
4. Mix bowls well, then add [[Light Soy Sauce]], [[Oyster Sauce]], [[Sugar]], and [[Salt]]/[[Chicken Stock Powder]]. Add [[Tomato]] and [[Egg]]s and mix further
5. Add [[Noodles]] and do final mix for serving
