A modified [[Da Lu Mian]] using homemade [[Chinese Pork Belly Broth]] as the stock base, plus pork belly from the broth and extra aromatic depth.
# Ingredients (2–3 servings)
## Noodles
- 300–360 g fresh wheat noodles (or 220–250 g dried)
## From your broth pot
- ~700 ml [[Chinese Pork Belly Broth]]
- 150–180 g cooked [[Pork Belly]] from the broth, thinly sliced
## Main solids
- 10 g dried [[Wood Ear Mushroom]], soaked and sliced
- 12–15 g dried [[Daylily]] buds, soaked and trimmed
- 3–4 dried [[Shiitake Mushroom]], soaked and sliced
- 5–8 g dried [[Porcini]], soaked and sliced
- 2 [[Egg]]s, beaten
## Aromatics
- 1 tbsp minced [[Ginger]]
- 2 [[Scallion]]s / spring onions, chopped (whites and greens separated)
- 1 clove [[Garlic]], minced
- 1 [[Star Anise]]
- 1/2–1 tsp [[Sichuan Peppercorn]]s, lightly crushed
- 1 dried [[Chili Pepper]]
## Seasoning
- 1 tbsp [[Light Soy Sauce]]
- 1 tbsp [[Shaoxing Wine]]
- 1/2 tsp [[Sugar]]
- 1/4 tsp [[White Pepper]]
- 1–2 tsp [[Shrimp Extract]] (start low, adjust)
- [[Salt]], to taste
## Thickener
- 2.5 tbsp potato starch (or cornstarch)
- 4 tbsp cold water
# Method
1. **Prep**
- Soak and clean wood ear, daylily, shiitake, and porcini.
- Reserve ~250 ml combined soaking water from the shiitake + porcini + daylily (avoid grit/sediment).
- Slice the cooked pork belly.
- Beat eggs.
2. **Bloom aromatics**
- Heat a little oil in a wok/pot.
- Add scallion whites, ginger, garlic, star anise, Sichuan peppercorns, and dried chili pepper.
- Stir-fry 20–30 sec until fragrant.
3. **Build the gravy base**
- Add wood ear, daylily, shiitake, and porcini; stir-fry ~1 min.
- Add sliced pork belly.
- Add Shaoxing wine and let raw alcohol cook off briefly.
- Pour in ~700 ml pork belly broth plus the reserved soaking water; simmer 5–7 min.
4. **Season**
- Add light soy, sugar, white pepper, and shrimp extract.
- Taste first, then add salt only as needed.
5. **Thicken**
- Stir starch slurry and drizzle in while stirring.
- Simmer 1–2 min until glossy and clingy.
6. **Egg ribbons**
- Keep at gentle simmer.
- Pour egg in a thin stream while stirring in one direction.
- Wait 10 sec, then gently stir once.
7. **Cook noodles + serve**
- Boil noodles until springy/al dente.
- Drain well, place in bowls, and ladle gravy over.
- Top with scallion greens.
